3 ½ pounds Roma tomatoes, halved 

2 hatch chiles, halved and ends trimmed with seeds removed

2 tablespoons olive oil, divided 

¼ yellow onion, peeled and roughly chopped 

3 garlic cloves


1. Preheat your oven to 300 degrees.

2. Place Roma tomatoes and hatch chiles on a baking sheet. Sprinkle with salt and drizzle with one tablespoon of olive oil. 

3. Put in the oven and roast for roughly one hour, or until tomatoes and chiles are juicy and slightly withered. 

4. Let the tomatoes and chiles cool for a while. Meanwhile, in a small pan over medium heat, add a tablespoon of olive oil. When warm, add chopped onion and garlic cloves. Cook until soft, for about five minutes. 

5. Transfer cooked onion and garlic to a blender. Add roasted tomatoes and one of the hatch chiles. (Depending on the size of your blender, you may need to do this in batches.)

6. Pulse the ingredients until smooth, typically about one minute.

7. Pour the soup mixture into a medium pot over medium-low heat. Add about ¼ cup of water to the blender, and swish it around to get the entirety of the mixture off the sides of the blender.

8. Pour the mixture into the pot with the soup. Let it simmer for 20 minutes.

9. Add salt to taste, then serve the soup mixture with your favorite grilled cheese.

1. In a large bowl, sift together flour, baking powder, and salt. Set aside.

5. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.

6. On a floured surface, roll chilled dough to about ⅛-inch thickness.

7. Cut dough into shapes of your choice using a cookie cutter, and place on prepared baking sheet.

8. Bake for about 8 to 10 minutes, or until the edges are lightly brown. Transfer cookies to wire racks and cool completely before decorating with your choice of store-bought frosting.
