There are too many new restaurants in California 2026 to keep track of, so consider this the cheat sheet. From the first Mexican restaurant in the world to earn three Michelin stars to a neighborhood spot you can just walk into, these 10 are the ones worth planning around. 

Bar Coto 

San Francisco, Jackson Square 

You know how you can never get into Cotogna? Same team, minus the impossible wait list. Bar Coto is their all-day café with espresso and gelato in the afternoon, small plates and cocktails at night. No reservation, no stress. If you think SF fine dining is hard to crack, this is your rebuttal — one of the best new restaurants California has going right now. 

Esme 

San Francisco, NoPa 

Esme took over the old Ragazza space and instantly felt like it had always been there. French-ish, seasonal, that back patio everyone loves. Roast chicken, pasta, cheese, done really well. This is the kind of spot you go to on a regular Tuesday, not one you dress up for. 

Californios 

San Francisco, SoMa 

The big one. In June, Californios became the first Mexican restaurant anywhere in the world with three Michelin stars. Chef Val Cantú's been building toward this for years — Mexican flavors, California produce, seriously good cooking and a room that's warm and loud rather than hushed and reverent. Even something as simple as a tortilla gets treated like it matters here.  

Fair warning: It was already hard to book and now it's much harder. Grab a table the second one opens. Of all the new Michelin star restaurants California 2026 produced, this is the one that made history. 

Enclos 

Sonoma 

Enclos also got bumped to three stars in June, which makes it the region's first at that level. Chef Brian Limoges pulls a ton from the gardens at Stone Edge Farm, and the whole thing feels calm and confident rather than fussy. If you're doing a Sonoma weekend, build it around this and get your reservation early. \

Troubadour 

Healdsburg 

Troubadour is a bakery and sandwich counter by day, then flips into a 20-seat tasting menu at night, and it just picked up its first star. The bread alone is worth the stop. Dinner seats fewer people than most dinner parties, so it's genuinely intimate. If you're mapping out where to eat in California 2026, this earns a stop without needing a special reason. 

Kato 

Los Angeles 

Kato went up to two stars this year, and it's still one of the tougher tables in LA. Small counter, tasting menu, chef Jon Yao doing very personal, very LA cooking that pulls from his Taiwanese background and whatever's best that week. It's not flashy, which is kind of the point.  

This spot is a real high point of the city's dining scene, and a reminder that LA rewards people who dig past the hype. Lock in a table well ahead; the counter fills the moment reservations drop. 

Bad Roman 

Beverly Hills 

Bad Roman is the loud, ridiculous, extremely fun red-sauce place from New York that landed on Canon Drive. Flambéed lobsters, pepperoni cups, negroni shots that roll across the bar on toy cars. It is not subtle and it does not care. Of all the new restaurants Los Angeles got this year, this is the one with staying power. Book ahead on weekends. 

Gemma 

Beverly Hills, Waldorf Astoria 

The Waldorf's rooftop reopened as Gemma, a pan-Asian spot from chef Peleg Miron with dim sum, robata, a raw bar and views for days. Lunch and weekend brunch are the easy way in — no occasion needed, and the setting does the heavy lifting. It's one of the more relaxed California restaurant openings 2026 to show up to. Dinner books faster, so aim for daytime. 

Lucien 

La Jolla 

Lucien is up on the third floor of La Plaza La Jolla: 30 seats, heavy bronze door, a 12-course tasting menu from chef Elijah Arizmendi (who earned a star at L'Abeille in New York before this). French-Japanese, super local, built around a wood-fired hearth, and there's an egg custard with caviar that San Diego food writers won't shut up about. The room feels like a cave you'd happily get lost in. New one-star as of June. Seats are limited; try Tuesday or Wednesday. 

Bacari 

San Diego, North Park 

Proof that new restaurants San Diego 2026 aren't all big-name arrivals. Bacari opened in February in the old Urban Solace building and became a neighborhood staple almost immediately. Venetian small plates, a rotating wine list, walk-ins welcome, zero ceremony. Shareable, easy, the kind of place you end up going back to without planning it.
